I haven't been on a proper paddling trip to New Zealand but I have been on holiday there for about 6 weeks. During that time I visited the New Zealand Kayak School for some river trips and instruction, I'd really reccommend this. New Zealand is a perfect winter paddling destination with a big variety of creeks, and big volume play runs. The north island is rain fed (but don't worry they get plenty) and the South Island gets a lot of snow in the winter and no shortage of rain in the summer. It was bloody warm while I was there though.
